The Challenge

My friends and I challenged each other to make a pumpkin and apple pie from scratch by the end of the year. Here is my completed Pumpkin Pie :)

Do you know how difficult it is to find a "pumpkin pie" pumpkin. I called all over town trying to find one. Maybe because it was after Thanksgiving. Finally found one at Whole Foods in Sugarhouse.

Baked the pumpkin in the oven for an hour and a half.

Scooped the fruit from the pumpkin and made a puree.

Mixed all the ingredients together for the pie filling. I was a bit worried at this point because I didn't expect it to be so runny but I continued to go with it.

The crust. I will be honest, I did have Ryan help me out right here because the instructions kept saying you have to get it perfect and Ryan is in kitchens all day so I needed his expertise. He helped with adding the water. BUT I did make another one all on my own because I had so much leftover filling.

I used a leftover pie tin and box from Marie Calendars, so when I brought it to my Mom's she didn't believe that I made it. Well here is the proof Mom :).
And my satisfied tasters...
I was pretty worried about how it would taste, but it was rather delicious if I do say so myself. I am not a big pumpkin pie fan, just need to add lots of whipped cream and it is tasty. I had so much fun doing this and it was much easier than I anticipated. Your turn ladies, you know who you are!

I like making pumpkin pie too. But I use banana squash. I think it has a better flavor and it is less stringy. (And it is easier to find.)

I am for sure not making one now. Who are you? I thought we were just joking, but leave it to you to out do us! :) And... until you bring me a piece of that goodness, I'm with your mom and I'm saying you just bought it. ha ha

I want to come to the girls Christmas party :( That pie looks absolutely delicious. I would love to try. I made a pineapple upside down cake but didnt take pictures. It was really yummy.

o my leslie you are an idiot. It wasn't a real challenge. Okay it was. I can't even keep my house clean now that cohen is here. O you have two kids, keep your house spotless, send out colcasac and bake pumpkin pies from scratch (I fully intended to use the can of pumpkin). Les you are awesome. I will still continue to carry over 'bake pie' on my to do list from week to week. I'll let you know how it goes.
